Ingredients
(Makes about 24 3-inch cookies)
(1) 1 box of red velvet cake mix (the standard size, mine was smaller so I used two of these boxes)
(2) 2 eggs
(3) 1 stick (1/2 cup) of butter (softened or melted but cooled)
(4) 2 tbsp flour
(5) 1/2 cup white chocolate chips
Steps
1. Preheat your oven to 350 degrees F. Crack in your eggs and give them a light whisk to break up the yolks. (Note: 1 batch should only need; mine has more eggs b/c I made a bigger batch.)
2. Add in your boxed cake mix and 2 tbsp of flour.
3. Add in your cooled, melted butter and mix it all together.
4. If your mixture is still sort of wet, add in a few tsp of flour at a time to yield a dough thick enough to roll. Now you should have a bit of a bloody mess lol.
5. Stir in your white chocolate chips.
6. Roll your dough into 1-1.5" balls onto parchment paper, leaving enough space between them to allow for spreading.
7. Bake at 350 degrees F for 10-12 minutes.
I tripled this recipe for my class's Christmas gift exchange and they seemed to be a hit. Enjoy!
