Banana Nilla Wafer Pudding
Ingredients
(Serving size variable, depending on how much you want to make)
(1) 1 bag of Nilla wafers or generic vanilla wafers (they taste the same!)
(2) 1 large container of pudding, or homemade pudding if you prefer! (I used tapioca but vanilla also works great)
(3) Bananas, sliced (You might want to choose riper bananas than the ones I had...pick some with only a slight tinge of green)
Steps
1. Line the bottom and sides of your serving dish with a vanilla wafer crust. I'd suggest a glass dish so you can see all the awesome layers.
2. Strategically distribute your banana slices to fill in any holes.
3. Spread a layer of pudding.
4. Repeat steps 2-3 for more layers, adding more wafer layers if you wish.
5. Top off with another vanilla wafer layer! Do try to pick your best wafers for the topping to maximize prettiness if you're serving to a large crowd...don't be like me and choose broken ones :P
6. Refrigerate. I usually like to refrigerate this overnight to let the banana flavor to sink in along with allowing the pudding to soften the wafers. If you prefer more of a crunch, by all means only refrigerate for 1-2 hours.
*If you want to make single servings, you can choose to crush the vanilla wafers to create a more evenly distributed crust. I personally like chunks of wafers so do as you please!
As always, feel free to experiment with different fruits and pudding flavors!

I always forget about nilla wafers, but then I have one and remember how good they are. This looks easy and delish...and no bake during this heat...phew :)
ReplyDeleteI totally know what you mean; I tend to avoid baking in the summer since it's so hot!
